#ScrollChefOfTheMonth: In conversation with chef Rahul Akerkar

When we started Scroll Food a little over six months ago, our objective was unambiguously clear: find out what modern India eats. We wanted to map this food-loving nation’s evolving palate in its complex diversity. Discover what it cooks, what it craves. At that time, it was unimaginable that the country’s reality would change beyond recognition so quickly.

The novel coronavirus has been a seismic event for this nation. Thousands have lost their lives. Millions have got displaced. The economy is ravaged and job losses are piling up. Among the unprecedented tragedy’s long list of victims is the restaurant industry.

To lend its support to the restaurant industry, Scroll Food started a new initiative called the Chef of the Month in early June. Under the initiative, each month, a chef will be anointed the section curator and given the opportunity to talk about food, their work and the changing times.

We were fortunate that we got to start the initiative with Chef Rahul Akerkar, one of the culinary masters of India. Over three decades, Chef Rahul has redefined Mumbai’s culinary landscape over and over. He changed the way the restaurant industry works with Indigo and he is continuing to do exciting work at Qualia, his restaurant in Mumbai.

Through all of June, he gave us a peek into his culinary journey and showed us how he creates magic in the kitchen with his nonpareil recipes. On June 27, we hosted a LIVE Q&A with Chef Rahul.
